KAZY, traditional meat dish of the Bashkir cuisine. It is popular among pastoralists. In the Bashkir cuisine K. is a sausage made of horse meat. Horse guts are filled with chopped meat and fat, and salt, ends are tied and the sausage is hung out in the sun to get cured. Sometimes K. is smoked in a hearth or a smokehouse, less often is stored frozen. K., made of meat and fat removed from the ribs, was valued the most. It was one of the products which the Bashkirs kept in store for a long time.
